Well she seems to love all things theatrical so why not arrange for her to go see a play, musical or other such show. I'm guessing that she's never been to a professional stage show and it may be the best present you could give her.

MG had a good idea to take her to a play or musical. You could also take her horse back riding or take her to see some horses. or buy her some acting or dancing lessons.
