My mum used to cook them; it's like the bit between a pigs trotter and it's thigh. I wouldn't take up her offer, they absolutely stink and sometimes you can see the pigs hairs in the flesh: vile!
That said, it may be a euphemism for something far more rude that a female lady friend could assist you with...

Technically, a 'hamshank' is the thinner end of a 'ham' ... as opposed to the 'butt' which is the fatter end. Yes, the meat is 'edible' ... and the girl who offered it to you was just telling you that what she was 'offering' was made from a PIG, and that it had been 'cured' into ham, possibly because some religions (Jewish, Muslim) don't allow people to eat meat that comes from PIGS among other animals they also 'don't allow'... due to the fact that when the 'religious laws' were written there was no good 'refrigeration' and pigs lived on 'garbage' ... nowadays, you can't get 'sick' from eating even 'rare' pork (what the 'dead pig' is called) because they are fed 'good food' and the meat is 'refrigerated properly' ...

Ham shank is from a pigs leg near the top of it.It makes great stock for lentil soup.
I don't think this female was offering you the food version though. Try some cockney rhyming slang to guess what she was offering you.Silly Boy

My mum bought one years ago and made soup from it, I thought yuck, I'll never eat that, but the soup tasted lovely. I have never bought one though, they are edible, they give flavour.
