Well lets get a little further into supply and demand and prices. St Val's Day comes in a frozen time of year for much of the United States so roses have to be flown in from the warmer states or hot house grown. This alone makes them more pricey than at other times of year. Also the rose producers are timing their crops of their most beautiful roses for spring weddings and St Val's Day.. not an easy thing to manage. If there is even one little bit of bad weather their major crops goes in the shredder.. so there is the abundance of roses or the lack of them making the prices fluctuate wildly in winter... usually UP.. Now add to that the fact that Sooo many ladies love roses as their Favorite flower to receive.. I myself love pink roses and daisys for a bouquet that says I love you :) Commercial rose growers are actually throwing dice every year with the crop and temperatures both at home and at the destinations. I wouldn't want my livelyhood depending on this delicate flower, but then considering how ladies love this flower as a symbol of affection.. They do make a profitable crop when the timing turns out right. Now go to a florest and look at bouquets and prices. You'll see that roses are one of the most affordable and beautiful flowers offered. The best part of all is that one or three roses make a beautiful corsage that might fit a limited budget in relation to a full dozen of roses with long stems. A box of candys with a one red rose and baby's breath corsage would always get a smile where I come from. Our only other way to deal with this rose problem is to raise our own and change Feb 14th to July the 4th or Labor day since they all fall in warm weather.. but I doubt it would really reduce the prices much.. Who wants to be slave to a delicate demanding dozen of rose bushes.. and yes it takes more than one bush to get a nice dozen of long stem roses. Keep the Faith and enjoy our system of supply and demand.. without it.. you would have to fly to california in person.. and fly back with your roses in hand.. :) a rather more expensive bouquet.

As you stated, supply and demand is one of the basic reasons, but don't forget the other reason...

There are a lot of men who are afraid of the wrath of their girlfriend/wife if they are not given gifts for this Hallmark made holiday. This is also a good way to let them know you are thorny.

Supply and demand for one, Its one of those hallmark or American greeting times, where roses, candy and perfume seem to go for enormous prices, because marketing companies know how to accomplish it.
Forgot I left out jewelry.

Because people are willing to buy them despite the cost. A great way for florists to increase income.

Price will go back down if you wait till after Valentine's Day. Of course, your sweetie will be mad that you didn't think her worthy of the expensive rose.
