The voltage produced depends on the metals used. The open-circuit voltage of a copper-zinc battery is 1.1 volts. So you will need six potatoes to produce six volts. Drawing current from the battery causes its output voltage to drop. More metal in the potatoes, and/or more potatoes wired in parallel will give you more current and less voltage drop.
