I have a Parks Az8 astrolight with a 1.25" 7.5mm eyepiece...what is the limit I can see with it?

What you can see will depend more on the sky conditions rather than the scope. In theory yo should be able to get down to magnitude 13 or so ... see the site below.

Pick up a copy of Sky & Telescope magazine. They have a monthly sky map in it or buy some software.
