I believe that all thirteen colonies declared independence simultaneously on July 4, 1776 when their representatives to the Continental Congress signed the Declaration of Independence. The war was fought to defend that Declaration. Any formal declaration following the war was thus unnecessary.

A peek into my almanac, however, reveals that Rhode Island had already declared independence on May 4, 1776, being the first state to do so. Thus Rhode Island was the first to declare independence, but it was before rather than after the war. Rhode Island was also the last of the thirteen former colonies to ratify the Constitution in 1790.
