I only do it once a month on a Sunday and today's the day! Green Been Casarole. Use fresh green beans, homemade cream of mushroom soup with baby porta bella mushrooms and home made onion rings. I make 2 huge dishes and we never have left overs. Nothing fancy, but it's a been a favorite for years.

I like "Mofongo" with shrimps, mofongo is made with green plantain. You get the green plantain peel it cut it in pieces and fried them for about 2 to 3 minutes each side in vegetable oil. The you get about 4 garlic cloves, is optional or as many as you like and a mortar, place one of the clove in the mortar and smash it into a little small pieces, then place a few pieces of the plantain in the same mortar with the garlic, you'll perform the same action until you have smashed all the plantain forming like a dough, meanwhile be cooking the shrimp in a skillet with cooking tomato sauce, little chopped green peppers and fine chopped onions, salt and black pepper; you can put a little crushed red pepper like the one used for pizza if you like want it spicier, cook the shrimps for about 5 minutes and let the sauce thicken in medium-high. Meanwhile get a soup bowl and place the plantain "dough" in the bottom of the same like making a crust for a pie when you've done take the shrimps and place them inside the "crust" of the plantain, spread it nicely. This dish can go with a nice salad of lettuce and tomatoes. Some lemon drops will give to the dish a nice flavor after is finished and served and is optional.

Manicotti !!!
Brown hamburger with garlic and a bit of salt.
In a bowl add 8ozs of cottage cheese, a bag of shredded mozzarella, a cup of Best Foods mayo mix together with the drained hamburger.
Boil the 8 manicotti shells, drain, cool, stuff in the mixture. Then heat oven at 350 degrees, pour a jar of Ragu regular sauce over the whole thing add oregano and parmesan cheese, cover with foil. Bake 25 minutes.. then take the foil off and bake another 10 for the cheeses all to melt. Total Heaven!!

Favorite Deviled Eggs
6 hard-cooked eggs, finely chopped
3 bacon strips, cooked and crumbled
1/4 cup mayonnaise
1 teaspoon minced onion
1/2 teaspoon salt, optional
1/2 tsp. pepper
1/4 tsp prepared mustard
1 cup (4 ounces) shredded cheddar cheese
In a bowl, combine the first seven ingredients until creamy. Shape into 1-in. balls. Roll in cheese. Cover and refrigerate until serving. Yield: about 2 doz.

Every sunday (like today) I make a roast for hubby & I, and put in potatoes, carrots, onions & mushrooms, let it cook all day long, comes out so tender. My mom used to make this for us kids when we were small...so I'm carrying on the tradition.

Bacon wraps! They're water chess nuts wrapped in bacon with a sauce on them. They're the best! They're time consuming to make but everybody loves them.
