I had to write a page about that story for English class last year. Here's my theory (abridged)...

The Princess, staring down at the man she loves, knowing he will either die a grisly death or forget her and live on, has a decision to make. She does not want her lover to die. Yet can she survive with the knowledge that she is no longer important to his life? The Princess – like most human beings – is bestowed with a jealous streak; and it is noted to be more potent than most. It is likely that her moral battle was swaying the victory flag towards the door containing the tiger. The woman behind the other door’s flirting with the Princess’ lover turned into a ticking time bomb. When the Princess gestured to the door, she was thinking of a life without the man she loved. Would she rather have death be the cause, or love for another? The evidence therefore makes the most likely candidate the door containing the tiger.

Hope that helps! =D

The lady. The tiger would kill him, and, being the Princess, she can take care of the competition any time she likes.

she picked the door without the tiger
she can always go after him even though it would be risky, but if she picked the tiger, she would never see him again.
