Copper is less reactive than hydrogen and therefore little or no reaction will occur when copper is exposed to acetic acid or vinegar (which is a very, very dilute form of acetic acid <5% by volume.
To obtain a reaction of coppere with vinegar, the reaction of copper carbonate with vinegar will occur at room temperature. An alternative is to add copper oxide to the vinegar and heat it, this will have the same affect.

If you have an opportunity, I would suggest to mix copper carbonate with acetic acid. Caron dioxide will go out and what you get left will be acetate. If you want to use acid-base reactions, you have to choose a salt that is less acidic than acetic acid.
