I would like to say this in a Valentines thing for someone. Anything along the lines of that is fine as well, although I know "I love you" is "Jag alskar dig". Thanks in advance if you can help! :D

Literally, it's: Var min Valentin!

In Sweden, Valentine's Day is called "Alla hjärtans dag", meaning "All Hearts' Day". So heart-related greetings are much more common than the mention of Valentine (although I think people understand Valentine references). "Mitt hjärta är ditt!" means "My heart is yours!" If you want to make it clear that it's only for this day, you could always slip in a cautious "...idag" ("today").
