Just have a NIC card for each one.

You can but why would you? If you want to connect one computer to another network( or one network to another network) you will need a router. then you just hook the router between switches, as long as you have different network addresses on each side of the router. It will save you the headache of trying to hook up two switches using two network cards in one computer.

Yes you can, but:
1. You need 2 networking cards in your computer.
2. Each card needs a different address range (each will be a part of a different network).
3. If you want computers from one network to reach the other through your computer, you need to enable routing.
