I have seen it spelled 'penguins,' but the dictionary does not show the plural.

Nopes, that is a wrong spelling. There are groups of some sort titles "Penguines".

But if you're referring to the bird that lives in the arctic, then the only way is Penguins.

"Penguins" would be the best way to spell it. It ends with a consonant, and the rule goes words ending with a consonant just add an s to spell it in plural form

No, I bleive it is "penguins" only. I've never seen it spelled with the "-es" ending.

I was taught that soft vowels take a doubled final consonant to retain the softness. Cancelled with a single el would be pronounced can-sealed. Similarly focussed without the second es is foc-used.
