My Sweet Potato Casserole

I know, it doesn't sound too exciting, but have to tell you that when I make this, there is NEVER any left over! Here is what I do:

I cook the sweet potatoes and mash them with some cinnamon. I put a layer of mashed sweet potatoes on the bottom o the casserole, then the next layer is a combination of lightly mashed bananas, coconut, and mini-marshmallows. Add the remaining sweet potato mixture on top of that, then put more mini-marshmallows and coconut on top. Sometimes, for a little crunch, I add chopped pecans on top.

Many people like to eat my casserole instead of dessert, so as I said, I NEVER have any leftover casserole!

I usually make a pecan pie as well!
