Yup. Since human beings need some important salts if we water is irradiated with X rays may cause the loss of those salts.

No. X-rays produce a very short term effect (because of their energy) and when used for the only likely purpose with water (sterilization) will not leave residual effects behind.

No. It is safe to drinking. Some molecules of water undergo splitting or ionization but these transformed species are unstable and new molecules of water are formed.
