It used to be because 90% of the people worked on farms and took off during the hottest part of the day, midday, to escape the Sun at its zenith and to refresh themselves.

Lunch :
take the midday meal;
a midday meal
a snack or light meal taken between any main meals.
The abbreviation " lunch ", in use from 1823, is taken from the more formal "luncheon", which the OED reports from 1580, as a word for a meal that was inserted between more substantial meals.
In medieval England, there are references to nuncheon, a non hench according to OED, a noon draught— of ale, with bread— an extra meal between midday dinner and supper, especially during the long hours of hard labour during haying or early harvesting.
Farmers and laborers in the 1800's, would get up very early in the morning, and break their fast ( which became breakfast) work for approx 6 hours, and then have a meal at noon or so - then continue working until it began to get dark ( which in Autumn or Fall is around 6 o'clock. So they ate their mid-day meal (lunch) halfway between breakfast and dinner. If they had breakfast at 7 am, and dinner or supper at 7 pm, then *lunch* would be approx at 1.00 pm

Most people go to work at 7-8am. By twelve, that's usually the midway point and makes the most sense to have the longest break of the day then. So why not eat at that time.
