i want this to mean ,,,i saw some students eat lunch while they were taking a test. and can i change it to like,,,,,i saw some students eat lunch taking a test ( without the while?)

one more question, could it mean while I was taking a test too?

Drop out first person, then there's no confusion.
"While they were taking a test, some students were eating lunch."

The last one just doesn't flow correctly. It doesn't mean you were taking a test too.

Personally I would try: I saw some students eating lunch while taking a test. This removes the redundant "they were" and makes the verb tense parallel. You could change your last sentence to: I saw some students eating lunch and taking a test. But this does not clearly state that they were doing it at the same time.

It won't make sense if you take out the 'while' but you could replace it with 'and'.

And the 'one more question' I don't understand what you're asking. Sorry
