Neon Genesis Evangelion is incredible. If you're looking for something a little lighter, Samurai Champloo is great also!

That would be hard to pick. I mean, all the anime I watch. I love each the same. But the question would be which was the most popular. Based on yahoo Answers the top few might be Bleach, or Naruto. But some other ones I like are Pretear, FFU, Saiyuki, Happy Lesson, vamipire hunter D, Inuyasha, Sailor moon, Dragon ball series, Tenchi Muyo, and many more. Also I love Case Closed. I'd stay up just to watch it.

Death Note
It's very famous in Japan. It started out as a manga series (which sold out around 20 million copies in Japan), and was later adapted for the big screen in the form of two live-action films. It topped the Japanese box office for two straight weeks, pushing The Da Vinci Code into second place. As of now, it is being aired in Japan as an anime television series (This you've got to watch!).

Honestly, I'm old fashioned. Bishoujo senshi Sailor moon. Japanese. Not the english dub. ¬¬;
But NGE for sure was one of the most epic. Hands down.
