The short answer is that you move about in your sleep. Friction between your body and the sheets generates the electricity.

The humidity is low this time of year. Why? Well, cold air cannot hold as much moisture as warm air. We heat the dry air, and further reduce the relative humidity. If relative humidity is high, static charges bleed off. This doesn't happen when the relative humidity is low.

You get static from turning over in bed. With dry air and dry heat there is alot of static as electrons get rubbed off one surface and on to another. Then it jumps in a spark as it tries to level out. Do you have satin sheets? That would make more static.

Do you mean static electricity? Rubbing against your sheets when you move at night can cause this to build up, and I'll save you the physics, but it discharges on metal stuff and you get shocked.

the rough edges of your hair rub against the fibers in your sheets causing static electrical build up, whigh then grounds ( sparks ) when you touch something that is grounded...electrically. seems that electricity always seeks ' ground.'
