I like Jimmy Carter. He's a man who doesn't just talk the talk, but walks the walk. He was a man who saw a need and did his best to fill the need, and continues to do so to this very day, decades after his presidency ended. He recieved the Nobel Peace Prize in 2002. Worked with habitat for the homeless. Has overseen elections in Latin American countries to ensure fairness. Has gone to the middle east many times for peace talks. A humble, hard working, man of action. Check out the link and see for yourself.
