When stars explode at the end of their lives, they send the heavier elements they created during fusion in their cores into space. That material is used in the next generation of star formation, including planet formation.
Without stars, the universe would be nothing but hydrogen, helium, and a little lithium. Rocky planets and life as we know it need a lot more than that - oxygen, silicon, carbon, magnesium, nitrogen, and a lot of other elements.

Because those stars could have planets, which is where we would find life. The trick is to find stars that are at the right stage in their "life-cycle," like our sun. Stars that are too old won't be hot enough or won't have the gravitational pull necessary to hold planets... that's my guess anyway.
