All the novels by Bantam books are part of the canon, a few of the comics published by dark horse are part of the canon but very few of them are. most of the comics have stupid things like darth maul not dying in episode one but coming back to life. Most of them are completly rediculous, so just stick to the bantam books

Actually, every Star Wars novel published must be vetted by Lucas. There are a slew of them that take place in the Star Wars galaxy, both prior to and following the movies. Usually they are grouped together at the bookstore, but just look up Star Wars on Amazon and you should find them.

almost all of the novels are approved by lucasfilm and are considered cannon, as was stated in a previous answer some of the comics (like the star wars tales seres) are not necessary cannon. all star wars books are screened by lucasfilm before it is published to make sure that they match the rest of the other books and the movies.
so, if it has been published, it is most likely to be cannon and therefore sanctioned (indirectly by George Lucas).

In a word: yes. There are different levels of canon, so whenever there's a conflict, the movies win, but most books are sanctioned by Lucasfilm.

You can find a list at http://en.wikipedia.org/wiki/List_of_Star_Wars_books .
