I remember years ago it would be so easy to find guitar tabs just by googling the song name and typing "guitar tabs." Now it seems when I do that, I get a bunch of sites that say they have been asked to remove the tabs due to legal reasons. Is it just me, or is everyone else having a tough time?

Not just you. This is just another case of the law/government over stepping it's bounds. I'm okay with no downloading and wouldn't think of making a copy of the Mona Lisa to put in my house but this is something that you can simply have any advanced guitar player tab out for you. This is not something that people are making money off of rather more of an educational tool for us poor suckers that need them. They have online dictionaries and encyclopedias that are used by "students" as "tools for learning" so I don't see the problem with tabs.

You just answered your own question; "legal reasons." They're f*cking ILLEGAL now, because the RIAA is just the dumbest organization on the face of the earth.
