In a really good restaurant I like medium, because the steak is tender enough to be cooked a little longer. In a fair restaurant, I prefer medium rare because they tend to serve tougher meat.
I'm making my husband take me out for a good steak now!

Medium Rare- If someone has a good steak cooked well done; never mind you might as well eaten a hamburger. A well done steak is a sin!

I LIKE MEDIUM RARE. IT PRESERVES THE FLAVOR OF THE MEAT WHILE ALLOWING THE STEAK TO ATTAIN THE TEMPERATURE NEEDED TO BE SURE BACTERIA IS DEAD.
THE BEST METHOS FOR ACCHEIVING MEDIUM RARE IS TO COOK THE MEAT IN AN OVEN. START WITH A HIGH HEAT SAY AROUND 400 DEGREES FOR SEVERAL MINUTES. THEN COOK ON A MUCH LOWER HEAT, PERHAPS 220 FOR AS LONG AS IT TAKES TO COOK THE STEAK. IT DEPENDS ON THE THICKNESS.
THIS IS THE WAY WE DID OUR PRIME RIB WHEN I COOKED FOR A LIVING A FEW YEARS AGO.. hARD TO COMPLAIN ABOUT PRIME RIB.
