Basically, Pop music is recognizable by the ability to grasp the melody of the song. Any melody within a jazz piece may difficult to recognize because it is imbedded in the chord structure, and is interpreted by the individual musician. However, it goes beyond that and it may help to have a basic knowledge of musical terms.
Jazz as a genre is often difficult to define, but improvisation is a key element of the form. Improvisation has been an essential element in African and African-American music since early forms of the music developed, and is closely related to the use of call and response in West African and African-American cultural expression.
Jazz is marked by the use of blue notes, syncopation, swing rhythm, call and response, polyrhythms, and improvisation. Jazz sets a chord structure, and a tempo.
The term "pop" indicates specific stylistic traits such as an emotional singing style, danceable beat, clear melodies, simple harmonies and repetitive structure so that people can catch on and join in. Pop music generally uses a simple, memorable melody and may use stripped-down rhythms.
The best way to grasp the difference in styles is do a side by side comparison. Get some pop music and some jazz music and play them and note the differences.
