They are canopic jars containing the organs of his lover Ankh-su-Namun (this was also the name of Pharoah Tut-Ankh-Amun's wife, btw!). Egyptians removed the organs before a body was mummified and placed them in Canopic jars in the tomb along with the mummy. Presumably, to ressurect Ankh-su-Namun, Imhotep would need to have her organs as well as her mummy.

I'm guessing that you're wanting a bit more than 'cos it's the plot of the movie' lol. I think it's because the ancient egyptians put different parts of the body in those jars (heart, liver, lungs and intestines) so to bring her (his lover) back to life he needed these parts.

its contained organs of either her of his (i cant remember) but they were needed to bring her or him back from the dead along with the book of the dead, the jars are sacarid and they contain heart, lungs, i think the brain, and maybe the stomach im not to sure.

the jars have the remains of Auk-sun-moon (sp)
back in ancient Egypt they had removed the vital organs (heart,brain) and place in jars part of the mummification process.
