Hmmm.. I can't think of WHY anyone would want to take ALL of the information off of a hard drive...

You might want to recover your data files.. but any programs or other such items are easily re-installed...

Recovery of a Hard disk should be done only to recover those items that would not be able to be reproduced in a reasonable amount of time.. and.. if you did not have backups of them then you should make new plans for the future of your data...

If it takes you more than a few hours to recover from a Hard disk crash then you should have a better recovery plan.

If you are trying to recover information from a Hard Disk that was not yours (and you now have possession of it) then you might try one of many good software programs that can un-delete files on a hard disk...

or.. you can just go in and do a sector edit on the HD and look to see what is there.

One way is create a disk image. Nero Backup and Norton Ghost will allow this. it is essentially cloning the drive. if you mean stuff you erased, then there are plenty of softwares. http://search.yahoo.com/search?p=erased+file+recovery&ei=UTF-8&fr=moz2

will help you.

If you are talking forensic data retrieval, you will need hardware that goes beyond the file overwriting that HDD's do. (when you erase a file, you don't actually physically remove it from the harddrive. instead, the pysical space it resided on is no longer reserved. however, harddrives use magnets which can leave a trace. forensic hardware can read this traces and recover amazing amounts of "lost" data.
