If mule is an offspring of a horse and a donkey, what would the offspring of mule x mule would look like? Would it look more like a horse or a donkey? Or is it impossible to breed a mule with a mule?

Like others have said, mules are hybrids and usually sterile.

However, there have been documented cases of fertile mules. In those cases, the animal in question hybridated with either a horse or a donkey, and the descendants were more or less horse-like or donkey-like.
Here's a scientific publication documenting some of these cases:

I don't know if anybody has attempted the mule x mule cross (especially because the fertile mules I've heard of are all females, and have been fertilized by male donkeys/horses). If it were possible, their offspring would have unique characteristics. This is because the karyotypes (chromosomes) of mules are hybrid (heterogeneous combinations of horse and donkey chromosomes); the descendants would have more diverse combinations, and probably differ from each other.

A mule is the offspring of a woman horse and a male donkey; in case you have been to circulate a Miniature Horse and a miniature donkey, you will get a miniature mule, that's fairly common. And the offspring of a woman donkey and a male horse is a hinny. Mules would desire to be considered a separate breed, yet they're greater of a hybrid.

If you breed a male donkey(jack) with a female horse(mare) you get a mule. If you breed a male horse(stallion) with a female donkey(jenny) you get a hinnie. All male mules and hinnies are sterile( incapable of reproduction). 1 in 1 million female mules/hinnies are born fertile. this is very very rare. so you can't breed a mule or hinnie to another mule or hinnie.

99.9% of mules are sterile. The rare one that is not, if it mated with another mule, would be a mule.

It's impossible. All the offsrping are sterile because the chromosmes of the two parents don't make a perfect match.
