1. Inside a stuffed animal - A big enough one that you can still have stuffing in it but the diary fits in the middle. Get some adhesive backed velcro so you can open and close it from underneath. You could also get a stuffed animal puppet, so it already has the slot.
2. Inside a dictionary - You can use some other book that's big enough too. You can get one for under a buck at a thrift store. Get an exacto knife and cut out a rectangle or whatever size to fit your diary. It takes time to cut it out and you can glue or staple some of the cut pages together to make it easier to get at later.
3. Ziplock Bag - Use heavy duty tape and tape a Large ziplock bag underneath or behind a cabinet or dresser, behind the toilet, on a hanger holding a dress or coat you never wear, or even inside that coat or dress, etc. (just never hide it in your bed). There are a lot of options when you use a bag and some tape. Just make sure you can slip it in and out of there easily enough.
A final suggestion - Make a fake diary and plant it under your mattress. When someone finds it they won't know about the real one. And every time you write in your real diary, write a couple dramatic silly things in your fake one first.

Put on the computer in Word. Under tools password protect the document to be opened. Then, you can burn it onto a CD once you get a month on there. That way, you have it for the future, and no one can read it. Just make sure you remember the password!!!
If you already have one started all you have to do is copy it over to word. Then you can shred the actual paper document.

Someone once said, the safest place to store data is a computer that is not plugged in, has no internet, and stands in a Swiss bank safe with my mother-in-law standing at the door with a rolling pin. And even then I wouldn't guarantee for the safety of the data.

Underneath your TV
Inside your pillow case
At the back of on of your draws
On top of your cupboard with a box on top
Down the side of the radiator
Hidden amongst your bookshelf
Inside a book with the pages cut out, in your bookshelf
Underneath your matress
In the box that your mobile/ipod came in that you're meant to keep
And...a box of tampons, nobody ever bothers to look there!

Put it in a bank safe. Or you could always buy a safe, lock your diary in it, and put the key around your neck.

I would say one of those small safes - you can get them reasonably priced at like a staples - otherwise, no matter where you hide it - if someone wants to read it, they will find it - good luck!!
