Why did they always refer to the Princess (who was obviously a female) as him?

My boyfirend remembers...see below...

Princess character was called tripitaka (i think) played by a famous japanese actress playing a male charater as a diguise.

it was fab show monkey,pigsy and sandie he was a horse monster then a fish monster.they all started out as guards in heaven 1st me thinks??X
