You do that in iTunes.
Create a playlist with all Hindi songs. Then drag and drop that list in your ipod.
Or check the "genre" field in your songs. You can manually edit it to say "Hindi" (if there is nothing there).
Then on your ipod, (after you transfer your songs again) look under Genre
