Having played Eliza, I would say that her basic humanity and intelligence is greater than Henry's even though he is the one who is supposed to be 'educated'. Also, the class structure in England and what a new accent does to Eliza when it comes to being part of her 'own people'. She can't turn to Henry and she can't go home. It's very tragic.
So, images.......flowers (for flower seller), phonograph, dictaphone,
phonetic symbols, horse races, ball gowns, bulgaria, earth strata photos to represent class structure, you get the idea.....good luck

When in the book do you have to do the collage in, as for in the beginning, she is not cultured, until Higgins takes her under his wing, how about doing one about how she emerges, like the Phoenix risen from the ashes, to where she becomes a lady. Or better yet, half of your collage of Eliza, in the beginning in juxtaposition to the lady she has become. Images, flowers, specially roses, even petals, textures, such as burlap (coarse), draw a picture of a woman, and use pictures from magazines, for hair, dress, and so on, use lace, words, again use magazine cut outs and so on, the last collage I had to do I got a mark of 93 %

Well Henry tries to filter Eliza from being who she is to being what he considers important. Why dont you use a picture of a phonograph to depict the filtering of what Henry considers useless or wrong to what he wants Eliza to beome. Which is exactly like everybody else he surrounds himself with foregoing any chance to learn from her differences.
