A mix of black and white is very popular.
Used to work in a pet shop and we could guarantee if a child came into to buy a pet rabbit with his/her parents, the name would be:
Black rabbit - Blackie
White rabbit - Snowy
Grey rabbit - Smokey
Netherland dwarf or Dwarf Lop were the most popular breeds.

Well, there are two main varieties- broken and solids. Brokens are white mixed with another color (like a pinto horse) and solids are just a solid color. In my experience people tend to prefer broken varieties.
BUT...within either group, you have many different color choices ( lilac, tan, silver, black, blue, etc.) Most people tend to choose a rabbit based on overall appeal, not just color. There are many different breeds, but the 5 most popular are the Holland Lop, the Dutch, the Mini Rex, the Netherland Dwarf, and the Mini Lop.
As places get smaller, so do places to keep pets...I would probably start out with one of the smaller breeds (such as Holland Lops) with a broken color pattern for maximum sales potential. Good luck!

Please don't breed. I volunteer at a rescue and 90% of the intake are from breeders who can't find homes or the stores can't sell and when the bunnies have grown a bit and lost their cuteness they end up in a rescue. Why not foster for a rescue. you will get a good chance of caring for babies and adults and know you've helped rehome some unfortunate or unloved bunnies
