More specifically, how are they able to render search results that have such a variety of stores and products. Are they utilizing API's, XML feeds, or is such content user submitted? Thanks a Bunch!

You are on the right track. Lots of "conlomerate" type sites do use an API for the stores in order to find what you are looking for. Many API's utilize XML to deliver the search result to a requesting site. The XML is then parsed by scripts at the site to deliver search results to you.

An API is definetly possible, but more likely is a mix of PHP/ASP and parser's to 'grab' other websites.

Other options could be XML or similar.
