rigor mortis does not set in immediately nor does it last forever. it takes a few hours to set in so if the cattle is cleaned up before that then rigor mortis does not have time to set in. if the carcass is cleaned up after rigor has gone then you wont see it then either. rigor is basically a chemical reaction in the muscle cells that causes them to contract and not relax, hence the extreme stiffness. once those reations have finished the dead body becomes flacid again.

It does- everything goes through rigormortis- basically the protiens holding the muscles in contraction are breaking down and all of the muscles expand. Once that stiffness goes away, all of the protiens in the muscle are disinegrating and it goes back to being relaxed (to a point).
The only way to avoid that is to keep meat in the freezer as within 2-3 hours of it dying. Once you chop it off the cow as well it will not go through it- there is not enough nuerons and connectivity to do so.

IT DOES TRUST ME I LIVE ON A FARM AND SOME TIMES COWS JUST DIE AND THEY DO GET STIFF AS A BOARD

It DOES, but they let the meat ROT a little and call it CURING the meat... TASTY HUH???
