the chemical is sulphur di oxide .
it has bleaching properties.it bleaches by reduction.in the presence of moisture so2 forms sulphuric acid and nascent hydrogen which reacts with the oxygen present in the vegetable colouring matter by forming water.hence due to the removal of oxygen the substance turns white.
but the bleaching is temporary only .after sometime the substance takes up oxygen from the atmosphere and regains its colour.

Well, the colors turn to white when you combine it with its complement color. Like yellow and blue, when combine turns to white.. however the amounts varied. This is where the idea of bleaching came from.. THATS ACCORDING TO PHYSICS
