Linguistically, they're both correct, but they can't be used interchangeabley. If the interview has not happened yet, then it should be "Let me know how it goes". That's when the interview is not happening yet. If you are in the interview or the interview finished, it's option 2. Example: "Hey, so what happened? Uh oh, I got paged gotta go, let me know how it went, alright?"

Option 1: Let me know how it goes

you would use option 2, if the interview has already taken place.

Option 1 is indicating a future event and option 2 is indicating the event already happened. So for "I have an interview on Monday" it's option 1. "I had an interview on Monday" would be option 2.

option 1

You can only let the person know how it went because you will be telling them AFTER the interview is over. Went is past tense.

To let the person know how it "goes" which is present tense, you would have to still be in the interview.

Option 2 is correct.

Option one would be correct because the interview hasn't happened yet. "Went" is past tense.
