So for any of you cattle or animal science people--I was wondering, do they just may leather out of food grade bovines or are there certain breeds raised just for leather? Just wondering.

Most leather products are made from beef cattle- not dairy cows. At least in rural WI, the dairy cow goes to the butcher or gets cut up and sold - meat is pretty tough though.
Beef cattle are bred for meat and leather. When they are processed, pretty much everything possible is used for economic reasons. Bones, hide, eyeballs (science class disection), tongue, meat, you name it.

I don't believe that there are any cattle that are raised for the sole purpose of harvesting their hides for leather. Cattle are raised primarily for beef and dairy production. When cattle are slaughtered, every effort is made to use every part of the carcass. This same principle applies for most animals that are raised for food/consumption.

I'm not a professional at all, but I think they use any hides. the quality of the finished product is a result of the technique used to tan the hide. I think that is the proper term. If they are treated properly and professionally, you will have a softer leather/suede than if not. But this is only a guess.
