Take any combo of skinning mining and herbalism (two of the three) You can sell the materials you gather to others who are making stuff. I make bank with mining and herbalism, and my boyfriend already has his epic flying mount because of mining and herbalism. Skinning is nice in combo with those though, because you don't have to alternate tracking herbs or minerals.

Now that BC is out, go with mining. Blacksmithers, engineers, and jewelcrafters all need ore and gems so they sell really easy.
I already have 40 gold on my lvl 20 mage from it :)
