Most of the above answers are correct...however if you are talking about the actual study of soil (aka dirt) then you would want to look under the heading of 'Soil Science'.
There are many colleges that confer degrees in the subject up through the PhD level, ie: Cal Poly, Texas A & M etc.

Pedology (from the Greek pedon, soil, earth), is the study of soils in its natural environment.[1] It is one of two main branches of soil science, the other being edaphology. Pedology deals with pedogenesis, soil morphology, soil classification.

The word edaphology is derived from the Greek words "edaphos" meaning ground or floor, and "logy" meaning word or wisdom. Edaphology is one of the two main branches of soil science, the other being pedology. Edaphology is concerned with the influence of soils on living things, particularly plants. The term is also applied to the study of how soil influences man's overall use of the land. General subfields within edaphology are agricultural soil science (known by the term agrology in some regions outside of the United States and Canada) and environmental soil science.

Depends what part of the dirt you're studying.
It could mean biology, engineering, geology....
