The Virgin River Canyon on I-15. Head south from St. George, Utah on I-15. There is a 29 mile stretch between Utah and Nevada. Go slow, stop at a few of the places meant for pulling over, take lots of pictures, and be sure to go when the sun is shining. Gorgeous!!

Definitely Maui. Stay at the Hyatt in Lahaina, rent a car, and drive the circuit around the west side of the island. Other highlights would include scuba diving and/or snorkeling, driving up to the top of Haleakala and watching the sun rise, and surfing if you're there at the right time.
The New Hampshire suggestion is also good, and likely cheaper.

Monterey Bay, California is absolutely lovely, especially in the springtime. If you can take the PCH- Pacific Coast Highway- it's even better. Also, from there you can go to Santa Cruz, which has one of the last boardwalks, and also San Francisco, which speaks for itself. =)

I would say the White Mountains in New Hampshire. Look for towns named Franconia or Littleton.
