A few weeks ago I noticed my temperature guage starting to lean towards hot when the car was idling. Driving, especially on interstate is fine.
The fan wasnt working, so I replaced the fan (new casing, blade, motor, the works), which is currently still working and turning when its supposed to.
I replaced the thermostat, even though the old one was fine.
The radiator fluid had turned brownish, so I had the radiator flushed out. The mechanic said it the radiator is fine and didnt need replacing, that the flush was all it needed.
What is there left that it could be?

unless it moves into the red, dont mess with it. If it goes into red just stop the car let it cool down and take it back to the mechanic. mabey you have like a clog in a hose or something that is slowing the flow. possible the pump. but seriously dont waste money on it unless you know for sure. i know a thermostats only like $5 but still if it really concerns you just go have a full diagnostic run on it. Its a physical for your car. Mabey it has car cancer idk, but good luck.

In all of this you have changed the thermostat. A different thermostat will not always open at the exact same temp as the original.
As long as the engine is running somewhere between 200° and 240° F, this is both acceptable and desired. This is the range they were designed to run.
One other possibility that you didn't mention was the water pump. If the impeller had eroded to a degree where there is less circulation efficiency, at lower engine RPM there may be a consequence.
Only way to tell for sure is to remove it for inspection.
You don't identify your car, but some can be inspected pretty simply while others are much more complicated.

my husband thinks it could be your scensor switch,
if you have a new fan it should take the air from the air intake valve and should never be hot while ideling , check to see if your fan is working while the car is in idle, the fan should kick in, if not it could be your scensor switch, you need your fan more when idiling then driving on the highway,
also if the fluid in your radiater was brown, that shows sign of rust in your radiater tank this can also cause overheating if rust is blocking the air. my husband had an experience like that one time and he had to flush the radiater three times before it would unclogg properly
if your radiater is fine, and the fan is fine, then he can only think of the scensor switch, or rust inside your radiater

It o.k. could be a thermostat. because of the fact the fan is popping on that's probably no longer a fuse. based at this form of motor vehicle, the cooling fan swap could be inflicting the fan to tutor on previous due or spin too sluggish (my Camry had that problem). in any different case it seems such as you have a coolant bypass problem: clog someplace in the equipment, thermostat caught in part open or closed (optimist or pessimist?), water pump vanes corroded, or something like that. once you start up making use of you improve the RPMs on the engine and makes the water pump spin speedier and enhance coolant bypass.

If your fluid turned brownish (i.e., rusty) you need a new radiator and, in addition, it may mean that your water pump will go next.

waterpump. Check and make sure your gauge is reading right, take it to someone that has one of those heat guns that you point it at whatever you want to see how hot it is and have them see how hot your radiator is running and then look at your gauge and see if it is reading about the same.

temp guages are never acurate 220 240 is normal the temp sensor may be shot
