I used to live near a turkey farm. Whenever I walked by and made a noise like "ooh!", they would all go "gobblecluck". Then they would go silent and wait for me to talk again. Then they would talk back to me. I had lots of fun. Why do they do this?

Um, what the hell does eating them have to do with their intelligence? We eat pigs. Pigs are smarter than dogs. I would like better proof as to their lack of intelligence than "we eat them".

You are sortta gobbling at them, so of course they gobble back. Domestic turkeys are known as rather dim bulbs - not QUITE so dumb as to drown looking up in the rain but well they are not always bright enough to go in out of the rain before they get chilled.
Wild turkeys are apparently a tad brighter....

Wild Turkeys are quite smart. Turkeys raised on a turkey farm are dumb. They are so stupid that, if it starts to rain, they will look up and can drown!

Turkeys are not dumb. In fact, Ben Frankin wanted to make them the national bird instead of the bald eagle.

turkeys are brainless creatures however wild turkeys are wild with a capitol wild! they only have incredible vision and hearing and act on the least stimuli
