Sweet potatoes would go nicely and are a little different than the usual plain mashed potatoes. I usually make creamed corn with ham (I've never actually boiled one though, I always bake ham). I also think a nice, thick soup would be good. Something like squash or pumpkin.

My mom always put potatoes, carrots, cabbage, and rutabaga in her boiled ham dinner.

um...those scalloped potatoes are good with ham. And cottage cheese goes with everything! Green beans are great and maybe some fruit.

northern beans and diced onions
corn bread and butter
Split peas and ham
Black beans and ham
all are bagged beans and you just follow the directions on the package
or you could have ham, green beans and potatoes
just add a couple cans of green beans.
