In any kind of demographic research where there's no explicit Latino/Hispanic category, those people are included with the Caucasians.

Mexican-Americans are classified as Caucasian primarily for census and political purposes. The rational is that hispanics are a mixed breed of races and so when they want to talk about white people properly they say non-hispanic whites. It would scare too many people if the full reality came out in the open.

Most Mexican Americans are of mixed heritage with varying combinations of Native American and Spanish ancestry. No label
fits, for instance, Mexican is a nationality, Hispanic & Latino are cultural labels related to Spanish conquest and have nothing to do with race (<-- this topic could go on and on). So to try and answer your question, Mexican Americans with Spanish surnames are part Caucasian.

Short answer, Mexican Americans are considered Hispanics in America.
Why would you want to be? There are too many benefits in America for being a minority.
You can claim that you are anything. As far as I know, Native Americans are the only ones required to prove Ethnicity. When an Asian checks off Asian on a job application, a potential employer does not ask for a race proof card. So, to answer your question, you can claim to be white if you want. Beware, if you mark this on an application and show up to an interview with a thick accent, dark skin, and high cheek bones your employer could construe this as a lie.

When I first read this question it made me wonder why is he/she asking this question? Let’s first begin with the concept of race, and ethnicity. It is important to understand that race is a social construct - in other words, only 2 percent of our genes are ultimately responsible for the visible differences between two human beings. In fact if you study the research finding by genome project you will come to the conclusion that race difference really do not exist. The example often given is if you have two males the same weight, height and body structure they are more genetically similar to each other then their racial group. With that said through out history we have used race to judge each other and conclude someone’s worth because of this 2 percent difference among groups of individuals. Ethnicity differentiated human more then race. Ethnicity represents social groups with a shared history, sense of identity, geography and cultural roots which may occur despite racial difference.
Therefore to answer your question are Mexicans/Latinos part of the Caucasian perhaps some of them may be, but that only accounts for 2 percent genetic difference. More importantly they have a shared different history sense of identity and cultural roots.
And I must add the following social comment to my answer Mexicans/Latinos/Hispanics what ever you want to call us shared history, identity and cultural roots are an integral part of the America history because Mexicans/Latinos/Hispanics were here prior to the Mayflower landing.

Mexicans are generally a mixture of Native Americans which are of the oriental race (sinodont, sundedont) and spanish which are caucasions. There are plenty of mexicans that are mostly or all spanish so these are caucasion in spite of what political correctness, politics of dividing, and the previous posters said. The ignorance regarding race is really amazing. Nearly everyone got the answer wrong IMO.

Depends on your definition, the person's heritage, and who you're talking to.
Technically, Caucasians are considered to be from Europe, western Asia, and parts of India and North Africa.
If the Mexican-American's heritage is Spanish (i.e. European), they might well be considered Caucasian.
If you're talking to the U.S. census bureau, they separate Hispanic and white as races.

The Caucasus mountains are north of Iraq. The original people from there live in Ukraine etc. and are blond and blue eyed.
Mexicans have either the original middle American Indian blood or Spanish or a mixture of both.
Unless you went to the Caucasus, I am not sure you could point to anyone and say they are 'genetically' Caucasian.
