I'm trying to figure out how you can look at a document and figure out whether it was printed on a laserjet or inkjet printer. i know it can be done, I just don't remember how.

Pour a tiny bit of water on the ink (not enough to damage the document!!). If it runs, it's an inkjet, if it stays, it's laserjet.

Use a magnifying glass to look at the ink. Inkjet will look more dotted, and laser printer will be smooth and shiny

Lasers deposit tiny granules of toner then melt it into the paper. The edges of characters will be rough and through a microscope you can see the granules. Injets spray ink on the paper and it soaks in.
