Protein skimmers are used to reduce fine organic matter thats suspended in the water column by using heavy aggitation via buibbles or other injection methods.
The heavy turbulence forces these particles to break away from the water and be caught in a column for collection. The heavier the turbulence the more efficient the skimmer. This action also aids in oxyegenation or aeration of the water and gas exchange releasing excessive Co2.
There are various types of skimmers on the market some DIY types are cheapoer and more efficent than store bought units. The load of the tank dictates the efficentcy you need to be using.

Protein gets in the water, being excreted by the fish. The skimmer works by blowing air through a column of water & the protein forms bubbles which are collected for disposal.
