Metal is better at conducting heat, so the heat from the pan can make its way up the handle. Plastic is better at insulating heat, keeping it out of the handle..

Metal is a good conductor of heat but plastic is a very poor conductor. So heat travels faster through metal than plastic so the handles feel cool

well metal absorbs heat and becomes hot while plastic is just it's opposite!it does get hot but depends on it's quality.some plastic handles can even be microwaved.this is the answer to your question

Due to metals properties it is a good heat conductor so it absorbs heat quite easily,although because of this its a bad insulator so when you stop providing it with heat it loses it pretty fast,plastic,however, is the opposite,very bad at absorbing heat,but it retains the heat that it absorbs for a rather long time
