After the falll of the Roman Empire (in the West) Europe fell into what are termed the "Dark Ages"--it bacame isolated from the East. In the regions that came under the control of the emerging Aribic/Islamic culture, however, both the older knowledge and an interest in science, art, and mathematics flourished.
Whatever else you can say about the Crusades, they brought many Europeans into contact with this active intellectual culture of the East for the first time in centuries--and the Crusaders brought back much of this learning with them. That, in turn, sparked renewed interest in things like mathematics, art, astronomy, literature, etc.

I think the Crusades led to the re-discovery of lost Greek and Roman art and literature during the battling and the pillaging, inspiring a renewed appreciation for creative thought.

Because they expanded interests in other cultures, i.e. those involved in the Crusades brought back to Europe with them art, literature, etc. from the regions to which they had traveled.

The Arabs were very learned and were the sole depository of knowledge of the ages after the fall of the Roman empire. They were also ahead of the European continent in the fields of science and math. The Renaisance was the cause of this knowledge flowing back into Europe because of the contact brought about by the crusades.

Because the knights and their pages etc. saw the world, they came to understand the world was larger than the small bit of Britain and France from which they came. It is understandable they would want to understand that world they saw and share it when they returned.
