There are chemicals used in making sour cream. after a certain time , their reaction changes with the other chemicals and is not good any more as a sour cream. Therefore they put down the date so you know, when not to use it.

well probably because if it is left too long even "sour" cream will turn inot moldy rotten cream.....lol ....is this question for real?
