Evolution of higher life forms (ie., animals) usually moves too slowly to see. We do see bacteria and other diseases evolve all the time, which is why many of our antibiotics become less and less effective. The bacteria evolve to survive.

It's like watching mountains form; it takes thousand of years, but it happens every day.

Evolution is a biological mechanism-it doesn't ever go away as long as there are biological organisms. Species are adapting to changes in their habitat just as they always have done.
